Our Red Wattle pigs run on Pasture & Forest (Sylvopasture) because pigs are forest animals. Treating our pigs like pigs brings out their authentic flavor and produces a superior product.
Ham comes from the top of the pork leg (the bottom is the shank, which can sometimes be a hock, see below). All of our pork is sold frozen on the day it was processed. Frozen hams, such as ours, can be cured at a later date.
Prosciutto and jamon serrano are examples of salt-and-air-cured hams.
